Scotcheroos were the desert of my youth. I probably brought these to every school function, that was back when you could bring home made goodies to school functions. I’m sure my mom could make these in her sleep, I requested these often. A crispy, peanut buttery bottom with a chocolate, butterscotch topping; name one person who does not love that combination. Best of all they are super easy to put together, and take no time at all.
1-1/2 cups sugar
1-1/2 cups light corn syrup
1-1/2 cups peanut butter
6 cups rice krispie cereal
6oz chocolate chips
6oz butterscotch chips
Combine sugar and corn syrup on stove top over medium low heat, be careful not to burn. Stir until sugar is dissolved.
Stir in peanut butter until smooth.
Turn off heat and add rice krispie cereal. Mix well.
Press into a greased 9×11″ jelly roll pan.
Melt butterscotch and chocolate chips together. You can do this in the microwave or a glass bowl over a pot of boiling water.
Spread chocolate and butterscotch mixture over rice krispie treats. Let cool for about an hour or until chocolate is hardened.
