Potato Soup

It’s the New Year and the bitter cold is upon us.  Today I am going to share a wonderful recipe for potato soup that will warm you from your head to your feet.  This soup is as hearty as it gets; baked potatoes, bacon, ham, and cheese come together in a beautiful medley of flavors that are sure to satisfy.  My husband shared this recipe with me when we started dating, and when the cold weather comes, this is the first recipe I turn to.  This makes a very large batch, with a newborn baby at home, I appreciate a dish that will last us several days.  Pour some of this hot soup in a thermos, grab your ice skates, and enjoy this winter weather.

Ingredients:

8 large baking potatoes

1 bunch of green onions, green parts only, chopped

2 cups of shredded cheddar cheese

2lbs of bacon cooked and chopped

2-16oz pkgs fully cooked cubed ham

1-1/2 cups butter

1-1/2 cups flour

12 cups milk

salt and pepper to taste

Bake potatoes. (To bake potatoes I always cook them in a 400 degree fahrenheit oven for 1 hour)  Then scoop the potato out of the skins.

Cook bacon and chop.  Shred 2 cups of cheese.  Chop green onions.

Melt butter over medium heat in a large stock pot.  Then stir in flour until smooth and slightly browned.

Maintaining medium heat, gradually add in milk.  Cook until thickened, about 15 minutes, stirring often and scraping the bottom of pan to avoid clumps of flour.

Next, reduce heat and add: potatoes, bacon, ham, and green onions.  Stir well.  Finally add cheese and give soup a final stir.  Season with salt and pepper to taste.
