Anyone that knows me, knows I love pizza. And I like all kinds of pizza from frozen, the chain pizza places (like Pizza Hut, Papa Johns, Dominos), to our local pizza joints; I could seriously eat pizza 7 days a week. Being somewhat close to Chicago doesn’t hurt, we have countless, delicious pizza eateries to choose from. This pizza recipe mimics the deep-dish pizzas that are unique to Chicagoland; a deep, thick crust layered with cheese, your favorite toppings, and topped with bubbly tomato sauce. This pizza is restaurant worthy.
Recipe: Adapted from an internet recipe my husband found years ago, I could not find the original recipe.
Ingredients for Crust:
3-1/2 cups all purpose flour
1 packet of active-dry yeast
1-1/2 teaspoons salt
1-1/4 cup warm water
3 tablespoons vegetable oil
Ingredients for Filling:
1 lb pork sausage browned (seasoned to your liking)
Pepperoni, mushrooms, etc.
About 7 slices of sliced mozzarella cheese
2 cups shredded mozzarella cheese
40 oz. pizza sauce
1 cup shredded parmesan cheese
Preheat oven to 450 degrees fahrenheit.
Combine in the bowl of your stand mixer: 1-1/2 cups flour, yeast, and salt. Stir together.
Add the warm water and oil to the yeast mixture and mix for 3 minutes with your dough hook attachment.
In the bowl, add the remaining flour and mix in with your hands. Place dough on a floured surface.
Knead dough on a floured surface for 5 minutes.
Cover dough with plastic wrap and a towel.
Let rise for 20 minutes, it will become a little puffy.
Roll the dough out to your desired size and place in, and up the sides of a well greased, large, cast iron skillet.
Cover skillet with a towel and let rise for 30 minutes, it will be a little puffy. Now you are ready to assemble your pizza.
First: cover the bottom of your pizza with sliced mozzarella cheese.
Second: add your topping ingredients. Such as, sausage, pepperoni, mushroom, etc.
Next, spread 16 oz of pizza sauce over topping. Then put shredded mozzarella on top of sauce.
Spread remaining pizza sauce on top of cheese.
Finally, sprinkle shredded parmesan cheese on top.
Bake in 450 degree oven, on center rack, for 35 to 40 minutes. Allow to rest for about 15 minutes before slicing.
