Chicken breast recipes are probably the most popular searched recipes. There are so, so many of them out there. Let me tell you, if you try this, I wouldn’t be surprised if it becomes one of your favorites. This recipe comes from my mom (as most of my recipes do) and my husband absolutely loves these delicious roll ups, he said it is definitely his favorite chicken dish! These chicken breasts are pounded out, dredged in bread crumbs, rolled up, browned, topped with mozzarella and mushrooms, and baked to ooey, gooey perfection. They are easily doubled, tripled, or quadrupled for a crowd, and look impressive, and taste even better!
4 to 6 chicken breasts
3 eggs whisked
1-1/2 to 2 cups of bread crumbs
3 cups of vegetable oil
12oz canned mushrooms
2 cups mozzarella cheese
14.5oz can chicken broth
Preheat oven to 350 degrees fahrenheit.
Pound each chicken breast to about 1/4 inch thickness.
Dredge each breast in egg.
Then dip each breast in bread crumbs until they are completely covered.
Roll each chicken breast up, securing them with tooth piks (I used 3, make sure you use the same amount for each breast so you can tell your dinner guests how many to look out for).
Put vegetable oil in a large pan and place over medium heat. Brown chicken roll ups, first on one side for about 3 minutes, or until golden brown and crisp.
Then brown on the other side for another 3 minutes, or until golden brown and crisp.
Remove from oil and lay chicken roll ups on a paper towel lined plate to absorb excess oil.
Place roll ups in a 9×13″ baking dish and cover with canned mushrooms.
Sprinkle mozzarella cheese on top and then pour chicken broth over the roll ups.
At 350 degrees fahrenheit, bake covered for 30 minutes, then bake uncovered for another 30 minutes.
