We are all busy, but even with busy schedules we do not have to sacrifice a healthy, home cooked meal. It’s all about easy prep, and this recipe is just that. It seriously takes under 10 minutes to prepare, put it in the oven, pour a glass of wine (if you are into that sort of thing), and unwind from your day. Soon you will have a moist, lemony, garlicy, chicken dinner on your hands. This recipe was given to me by my Aunt Ann, and I whip this meal up at least once a month. I usually serve with a side salad and fettucinni alfredo.
What you need:
1/2 cup dry Bread Crumbs
1/4 cup grated Parmesan Cheese
1/2 teaspoon salt
1/2 teaspoon pepper
Boneless Skinless Chicken Breasts (This recipe is good for 4-5 chicken breasts, I used 3 for my family, cause its just the 3 of us)
1/2 cup Milk
1/4 cup melted Butter
1-2 minced Garlic Cloves
Juice of 1 Lemon
Sprinkle of Paprika
(Capers are an optional addition)
Preheat oven to 350 degrees Fahrenheit.
Combine dry bread crumbs, parmesan cheese, salt, and pepper in a bowl and mix.
Pour milk into another bowl. Dip a chicken breast in the milk.
Then dredge the chicken breast in the bread crumb mixture to completely cover the chicken breast. Repeat with the remaining chicken breasts.
Place chicken breasts into a baking dish.
In another bowl combine the melted butter with garlic and lemon juice, (capers if desired).
Pour butter mixture over chicken breasts, then sprinkle with paprika.
Bake uncovered in 350 degree Fahrenheit oven for 1 hour.
