Have you ever had a chicken quesadilla from taco bell? I do not frequent taco bell, or any fast food joint for that matter, but I tried the chicken quesadilla and it was pretty tasty, I especially liked the sauce. So I created this chicken enchilada recipe which has a sauce that tastes exactly like the sauce in Taco Bell’s chicken quesadilla. My husband calls this an American take on Mexican food. He loves authentic Mexican food, as do I, and this is not an authentic Mexican enchilada. But he sure gobbles these up, and so does any body else I cook these for.
What you need:
2 Tablespoons Olive Oil
1.4 lbs Chicken Breasts cubed
1/2 of a large Onion diced
1 (4oz.) can Diced Green Chiles
1 packet of Taco Seasoning
1/4 cup Water
4 cups Shredded Cheese (I used 2 cups Mozzarella and 2 cups Medium Cheddar)
8oz. Taco Sauce
8oz. Sour Cream
5 large flour tortillas
Preheat oven to 350 degrees Fahrenheit
Heat olive oil in a large skillet. Add the cubed chicken and onions to oil.
Cook the chicken and onions until chicken is no longer pink, chopping chicken into smaller pieces as it cooks. I am able to do this with a wooden spoon.
Add taco seasoning, water, and green chiles to chicken and stir until thoroughly incorporated. Set aside.
In a separate bowl, combine taco sauce and sour cream. Stir well. This is the sauce.
Shred the cheese. Or you can use pre shredded cheese.
Spread a 1/4 cup of sauce on the bottom of a 13×9 baking pan.
Place a couple of spoonfuls of sauce onto a tortilla and spread over tortilla.
Next sprinkle with cheese.
Then add about a 1/2 cup of chicken mixture on one side of the tortilla.
Finally roll tortilla, starting with the end the chicken is on. Repeat this process, making 5 enchiladas.
Place seam side down in a baking dish.
Top with remaining cheese. Cook in 350 degree Fahrenheit oven for 30 minutes.
