Oven Barbecue Chicken

Barbecue Chicken is my husband’s specialty on the grill.  When we entertain in the summer it is usually our go to dish.  The guys gather around the grill with beer in hand, while us women sip wine and gossip, soaking up the sunshine.  But, its November in Illinois and tending the grill for an extended period of time could lead to frostbite, ok that may be an exaggeration, but it is pretty darn cold.  So here is a recipe for Oven Barbecue Chicken.  This dish is so flavorful and pretty beautiful when you pull it out of the oven.  With the holidays fast approaching this is a great dish to entertain with, make sure you make enough, my husband just about ate the whole chicken, he couldn’t stop picking at it.

What you need:

1 cut up Chicken

1/2 cup Oil

Salt and Pepper for Seasoning

Flour for Browning

1 cup chopped Onions

1/2 cup chopped Green Pepper

1/2 cup chopped Celery

1 cup Ketchup

1 cup Water

2 Tablespoons Brown Sugar

2 Tablespoons Worcestershire

Lets get started!

Preheat oven to 350 degrees Fahrenheit.

First cut up your chicken, if you haven’t tried this yet there are some great tutorials (I followed the tutorial in my Taste of Home cookbook), and it saves you some money.  Or you can buy a precut chicken.  I leave the skin on.  Season the chicken on both sides with salt and pepper.

Next dip pieces of chicken in flour.

Heat 1/2 cup of oil over medium to medium high heat and brown chicken on both sides.  I did this in two batches.  Set aside on paper towel lined pan to soak up excess oil.

Chop onions, green peppers, and celery.  Place in saute pan.

Add ketchup, water, brown sugar, and worcestershire to veggies, and stir over medium to medium high heat.  Bring to a boil.

Put chicken into baking dish (I squeezed mine into a 13×9, it was a little tight, but I didn’t have anything bigger, and I didn’t want to dirty 2 dishes) and pour sauce over chicken.

Place dish into 350 degree Fahrenheit oven for 1 hour and 45 minutes.

Doesn’t it look beautiful and oh so delicious?  Serve up to someone you love, they will be sure to love you back!
